Instructions

  • 1. Marinate the chicken by combining it with olive oil and fajita seasoning in a mixing bowl. Let it sit for at least 15 minutes.
  • 2. Prepare the vegetables by slicing the bell peppers and onion into thin strips.
  • 3. Cook the rice or quinoa according to package instructions.
  • 4. Heat a skillet over medium-high heat and add the marinated chicken. Cook for 5-7 minutes until golden brown.
  • 5. Add the sliced bell peppers and onion to the skillet and sauté for an additional 5-6 minutes until the vegetables are tender.
