Instructions
Preheat your oven to 350°F (175°C).
In a large pot, bring salted water to a boil and add the rotini pasta. Cook according to package instructions until al dente, about 8-10 minutes.
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add chopped green onions and cook for 2-3 minutes until softened.
Add shredded chicken to the skillet and stir for another 2-3 minutes.
Pour in the enchilada sauce and add the drained black beans. Stir well and let simmer for 5 minutes.
Drain the pasta and add it to the skillet, mixing everything together.
Reserve 1 cup of cheddar cheese for topping, and stir half of the remaining cheese into the pasta mixture.
Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
Sprinkle the reserved cheddar cheese on top.
Bake for 20-25 minutes until the cheese is bubbling and golden brown.
Let cool for 5 minutes, then garnish with cilantro and remaining green onions.
