Ingredients

Cauliflower Rice

  • 4 cups Cauliflower Rice Freshly made or store-bought.

Protein

  • 1 pound Boneless Skinless Chicken Breast Cut into bite-sized pieces.

Cooking Ingredients

  • 2 tablespoons Olive Oil For cooking the chicken.
  • 2 tablespoons Taco Seasoning Store-bought or homemade.

Vegetables

  • 1 cup Bell Peppers Diced, mix of colors.
  • 1 medium Onion Diced.
  • 1 cup Black Beans Canned, drained and rinsed.
  • 1 cup Cherry Tomatoes Halved.

Toppings

  • 1 whole Avocado Sliced.
  • 1/2 whole Lime Juice for drizzling.
  • 1/4 cup Fresh Cilantro Chopped, for garnish.

Instructions

  • Prepare cauliflower rice by grating a head of cauliflower or using pre-packaged cauliflower rice.
  • Season chicken with olive oil and taco seasoning, marinate for 10 minutes.
  • Cook chicken in a skillet over medium-high heat for 5-7 minutes until golden brown.
  • Add diced onion and bell peppers to the skillet, sauté for 3-4 minutes until tender.
  • Add black beans and cherry tomatoes, cook for an additional 2-3 minutes.
  • In another skillet, cook cauliflower rice with salt and pepper for 5-7 minutes until tender.
  • Assemble bowls with cauliflower rice, chicken mixture, avocado, cilantro, and lime juice.
  • Serve immediately while warm.

Notes

Customize with toppings like jalapeños, cheese, or corn for added flavor.
