Instructions
Prepare cauliflower rice by grating a head of cauliflower or using pre-packaged cauliflower rice.
Season chicken with olive oil and taco seasoning, marinate for 10 minutes.
Cook chicken in a skillet over medium-high heat for 5-7 minutes until golden brown.
Add diced onion and bell peppers to the skillet, sauté for 3-4 minutes until tender.
Add black beans and cherry tomatoes, cook for an additional 2-3 minutes.
In another skillet, cook cauliflower rice with salt and pepper for 5-7 minutes until tender.
Assemble bowls with cauliflower rice, chicken mixture, avocado, cilantro, and lime juice.
Serve immediately while warm.
