  • 2 cups Butternut Squash, peeled and diced Look for firm and heavy squash for ripeness.
  • 4 ounces Goat Cheese Use fresh, soft goat cheese for best results.
  • 1 medium Baguette or Ciabatta Bread Slice into ½-inch thick pieces.
  • 2 tablespoons Extra Virgin Olive Oil Use high-quality olive oil for best flavor.
  • Salt and Pepper To taste.
  • handful Fresh Herbs (optional) Such as parsley or basil for garnish.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Peel and dice the butternut squash into even, bite-sized cubes and place in a mixing bowl.
  • Drizzle 1 tablespoon of olive oil over the squash and season with salt and pepper. Toss to coat.
  • Spread the squash on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and golden brown.
  • Slice the baguette or ciabatta into ½-inch thick pieces and arrange on another baking sheet.
  • Drizzle the bread slices with the remaining olive oil and optionally rub with a cut garlic clove.
  • Toast the bread in the oven for about 5-7 minutes until golden brown and crispy.
  • In a small bowl, mash the goat cheese slightly for easier spreading.
  • Spread a layer of goat cheese on each slice of toasted bread.
  • Top each slice with a spoonful of roasted butternut squash.
  • Garnish with freshly chopped herbs if desired and serve immediately.

Notes

For variations, consider adding balsamic glaze, crushed red pepper flakes, or toasted nuts for extra flavor and texture.
