Instructions
Preheat your oven to 400°F (200°C).
Peel and dice the butternut squash into even, bite-sized cubes and place in a mixing bowl.
Drizzle 1 tablespoon of olive oil over the squash and season with salt and pepper. Toss to coat.
Spread the squash on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and golden brown.
Slice the baguette or ciabatta into ½-inch thick pieces and arrange on another baking sheet.
Drizzle the bread slices with the remaining olive oil and optionally rub with a cut garlic clove.
Toast the bread in the oven for about 5-7 minutes until golden brown and crispy.
In a small bowl, mash the goat cheese slightly for easier spreading.
Spread a layer of goat cheese on each slice of toasted bread.
Top each slice with a spoonful of roasted butternut squash.
Garnish with freshly chopped herbs if desired and serve immediately.
