Diced Fresh Tomatoes
Roma or vine-ripened tomatoes work best.

A handful of fresh basil leaves.

Instructions
1. Pat the chicken breasts dry and season with salt and pepper.
2. Preheat grill or oven to medium-high heat.
3. In a bowl, combine tomatoes, garlic, basil, balsamic vinegar, and 2 tablespoons of olive oil. Mix well and season to taste.
4. Grill chicken for 6-7 minutes on each side until cooked through.
5. If baking, place chicken in the oven for 25-30 minutes until fully cooked.
6. Prepare serving plate with side dishes.
7. Let chicken rest for 5 minutes before slicing.
8. Serve chicken topped with bruschetta mixture and drizzle with remaining olive oil.
9. Enjoy immediately while fresh and warm.
