Main Ingredients

  • 1.5 pounds Boneless, Skinless Chicken Breasts Approximately 1.5 to 2 pounds.
  • 2 cups Diced Fresh Tomatoes Roma or vine-ripened tomatoes work best.
  • 1/4 cup Chopped Fresh Basil A handful of fresh basil leaves.
  • 2-3 cloves Minced Garlic
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Balsamic Vinegar
  • Salt and Pepper To taste.
  • 1/4 cup Grated Parmesan Cheese Optional, for added flavor.

Instructions

  • 1. Pat the chicken breasts dry and season with salt and pepper.
  • 2. Preheat grill or oven to medium-high heat.
  • 3. In a bowl, combine tomatoes, garlic, basil, balsamic vinegar, and 2 tablespoons of olive oil. Mix well and season to taste.
  • 4. Grill chicken for 6-7 minutes on each side until cooked through.
  • 5. If baking, place chicken in the oven for 25-30 minutes until fully cooked.
  • 6. Prepare serving plate with side dishes.
  • 7. Let chicken rest for 5 minutes before slicing.
  • 8. Serve chicken topped with bruschetta mixture and drizzle with remaining olive oil.
  • 9. Enjoy immediately while fresh and warm.

Notes

Leftovers can be stored in an airtight container for up to 3 days.
