Instructions
Heat olive oil in a large skillet over medium heat until shimmering.
Add the chopped onion and sauté for about 5 minutes until translucent.
Incorporate grated carrot and chopped celery, cooking for an additional 3-4 minutes.
Add ground beef, breaking it apart as it cooks for about 7-10 minutes until browned.
Finely chop black garlic and add to the skillet, cooking for 2 minutes.
Pour in crushed tomatoes and stir to combine.
Season with salt and pepper, then bring to a gentle simmer.
Reduce heat to low and cook uncovered for at least 30 minutes, stirring occasionally.
Adjust seasoning if necessary and stir in fresh basil just before serving.
Serve hot over pasta or as a filling for other dishes.

This sauce can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
