  • 1 medium Onion Finely chopped.
  • 2 tablespoons Olive Oil For sautéing.

  • 0.5 cup Breadcrumbs For topping.

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  • Add minced garlic and sauté for an additional minute until fragrant.
  • Add chopped spinach to the skillet and stir until wilted, about 3-4 minutes.
  • Remove from heat and let cool slightly.
  • In a mixing bowl, combine ricotta cheese, eggs, and Parmesan cheese. Mix until creamy.
  • Season the mixture with salt and pepper to taste.
  • Add the wilted spinach mixture to the ricotta mixture and stir gently to combine.
  • Transfer the mixture to a greased 9x9-inch baking dish and smooth the top.
  • Sprinkle breadcrumbs evenly over the top.
  • Bake for 30-35 minutes, until golden brown and set.
  • Let cool for a few minutes before slicing and serving.

Notes

This casserole can be customized with different cheeses or vegetables. It can also be made ahead of time and stored in the refrigerator.
