  • 200 g Fresh Noodles Egg noodles or rice noodles, cooked until just tender.
  • 1/4 cup Tahini Well-stirred for best consistency.
  • 1 teaspoon Ground Sichuan Peppercorns Freshly ground for maximum potency.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Chili Oil Adjust according to heat preference.
  • 2 tablespoons Soy Sauce Use good-quality soy sauce.
  • 2 pieces Green Onions Finely chopped for garnish.
  • 1 tablespoon Sesame Seeds Toasted, optional for garnish.

Instructions

  • 1. Bring a large pot of water to a boil, add a pinch of salt, and cook the fresh noodles according to package instructions (3-5 minutes).
  • 2. In a mixing bowl, combine tahini, soy sauce, chili oil, and minced garlic. Stir until smooth and creamy.
  • 3. Reserve 1/2 cup of pasta cooking water, then drain the noodles and rinse under cold water.
  • 4. Return the drained noodles to the pot over low heat, add the tahini sauce, and toss to coat evenly.
  • 5. Sprinkle ground Sichuan peppercorns over the noodles and mix thoroughly. Adjust seasoning if needed.
  • 6. Transfer the noodles to a serving platter, garnish with green onions and sesame seeds, and serve warm.
