Instructions
1. Bring a large pot of water to a boil, add a pinch of salt, and cook the fresh noodles according to package instructions (3-5 minutes).
2. In a mixing bowl, combine tahini, soy sauce, chili oil, and minced garlic. Stir until smooth and creamy.
3. Reserve 1/2 cup of pasta cooking water, then drain the noodles and rinse under cold water.
4. Return the drained noodles to the pot over low heat, add the tahini sauce, and toss to coat evenly.
5. Sprinkle ground Sichuan peppercorns over the noodles and mix thoroughly. Adjust seasoning if needed.
6. Transfer the noodles to a serving platter, garnish with green onions and sesame seeds, and serve warm.
