Instructions
Start by preparing your shrimp. If using frozen shrimp, ensure they are fully thawed and patted dry with paper towels.
In a small bowl, combine the soy sauce, cornstarch, sesame oil, and sugar. Whisk until smooth.
Heat a large skillet or wok over medium-high heat. Add the vegetable oil and allow it to heat until shimmering.
Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds until fragrant.
Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes without stirring, then flip and cook for another 2-3 minutes until pink and opaque.
Remove the shrimp from the skillet and set aside on a plate.
Add the sliced bell peppers, broccoli florets, and julienned carrots to the skillet. Stir-fry for about 4-5 minutes until tender but still crisp.
Return the cooked shrimp to the skillet with the vegetables. Pour the prepared sauce over the mixture and toss until evenly coated.
Stir in the chopped green onions and season with salt and pepper to taste. Remove from heat.
Serve the shrimp stir fry hot over cooked rice or noodles, or enjoy it on its own.
