  • 2 cups cooked jasmine rice Ideally, use day-old rice for the best results.
  • 1 pound shrimp (peeled and deveined) Fresh or frozen shrimp can be used; thaw if frozen.
  • 2 tablespoons vegetable oil High smoke point oil for frying.
  • 2 large eggs Whisked and scrambled in the pan.
  • 1 cup frozen peas and carrots Adds texture and sweetness.
  • 3 cloves garlic (minced) Infuses the dish with aromatic quality.
  • 3 tablespoons soy sauce Adds depth and umami.
  • 1 tablespoon sesame oil Imparts a distinct flavor and aroma.
  • Salt and pepper To taste.

Instructions

  • Prepare the rice by spreading freshly cooked rice on a baking sheet to cool, or use day-old rice.
  • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove and set aside.
  • Add another tablespoon of vegetable oil to the skillet. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the shrimp.
  • Add minced garlic to the skillet and stir-fry for 30 seconds until fragrant. Then add frozen peas and carrots, stir-fry for 2-3 minutes until heated through.
  • Return shrimp and scrambled eggs to the skillet. Add cooked rice, soy sauce, and sesame oil. Stir to combine and heat through.
  • Stir in sliced green onions and adjust seasoning with salt and pepper. Cook for an additional minute.
  • Transfer to a serving dish, garnish with more green onions if desired, and serve hot.
