Instructions
Prepare the rice by spreading freshly cooked rice on a baking sheet to cool, or use day-old rice.
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque. Remove and set aside.
Add another tablespoon of vegetable oil to the skillet. Pour in the beaten eggs and scramble until fully cooked. Remove and set aside with the shrimp.
Add minced garlic to the skillet and stir-fry for 30 seconds until fragrant. Then add frozen peas and carrots, stir-fry for 2-3 minutes until heated through.
Return shrimp and scrambled eggs to the skillet. Add cooked rice, soy sauce, and sesame oil. Stir to combine and heat through.
Stir in sliced green onions and adjust seasoning with salt and pepper. Cook for an additional minute.
Transfer to a serving dish, garnish with more green onions if desired, and serve hot.
