Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  • Add the minced garlic and sauté for an additional minute.
  • Incorporate the diced bell pepper and sauté for another 3-4 minutes.
  • Stir in the diced tomatoes and cook for about 2 minutes.
  • Add the rice, stirring well to coat it in the oil.
  • Pour in the vegetable broth, paprika, oregano, salt, and pepper. Stir to combine.
  • Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  • Remove the lid and fold in the shrimp and frozen peas. Cover and cook for an additional 5-7 minutes.
  • Remove from heat, add lemon juice if desired, fluff the rice, and garnish with parsley before serving.
