Ingredients

Pizza Dough

  • 2 cups Flour For homemade dough
  • 1 cup Water Warm water for dough
  • 1 packet Yeast Active dry yeast
  • 1 teaspoon Salt For dough
  • 2 tablespoons Olive Oil For dough and roasting

Roasted Squash

  • 1 medium Butternut Squash Peeled and cubed
  • 1 tablespoon Salt For seasoning squash
  • 1 teaspoon Pepper For seasoning squash

Wild Mushrooms

  • 2 cups Wild Mushrooms Shiitake, oyster, or chanterelles
  • 2 cloves Garlic Minced

Cheese

  • 2 cups Shredded Mozzarella Cheese For topping
  • 0.5 cup Goat Cheese Crumble for topping

Fresh Herbs

  • 1 tablespoon Fresh Thyme or Rosemary Finely chopped for garnish

Seasonings

  • to taste Salt For seasoning
  • to taste Pepper For seasoning

Instructions

  • Preheat your oven to 475°F (245°C).
  • Prepare your pizza dough by mixing flour, water, yeast, salt, and olive oil in a bowl. Knead until smooth and let rise for at least an hour.
  • Peel and cube the butternut squash. Toss with olive oil, salt, and pepper, then roast in the oven for 25-30 minutes.
  • Clean and slice the wild mushrooms. Sauté with minced garlic in olive oil until golden brown.
  • Roll out the pizza dough and transfer it to a pizza stone or baking sheet.
  • Drizzle olive oil over the dough and spread evenly.
  • Sprinkle half of the mozzarella cheese over the crust, followed by the roasted squash and sautéed mushrooms.
  • Top with the remaining mozzarella and crumbled goat cheese.
  • Bake for 12-15 minutes until the cheese is bubbly and the crust is golden brown.
  • Let the pizza cool for a few minutes, then sprinkle with fresh herbs before serving.
