Instructions

  • Peel and chop the potatoes into even-sized chunks. Place them in a large pot, cover with cold water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes until fork-tender.
  • In a medium saucepan, melt 2 tablespoons of butter over medium heat. Add chopped onion and celery, stirring until softened, about 5-7 minutes.
  • Add dried herbs, stir, and cook for an additional minute. Pour in vegetable broth and bring to a gentle simmer. Add stuffing mix and mix well. Remove from heat and let sit for 5 minutes.
  • Drain the cooked potatoes and return them to the pot. Add remaining butter, milk, salt, and pepper. Mash until smooth and creamy.
  • Preheat oven to 350°F (175°C). In a greased baking dish, spread mashed potatoes evenly, then spoon stuffing mixture on top.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until stuffing is golden brown.
  • Let cool for a few minutes, garnish with parsley, and serve.
