Instructions
Prepare your ingredients: chop the onion, garlic, carrots, and celery.
Heat olive oil in a large skillet over medium-high heat. Sear short ribs for 4-5 minutes on each side until browned.
Transfer the short ribs to the slow cooker.
Sauté onion, garlic, carrots, and celery in the same skillet for 5-7 minutes until soft.
Stir in tomato paste and cook for another 2 minutes.
Pour in beef broth and scrape the skillet to release flavorful bits.
Add spices: cinnamon, smoked paprika, salt, and pepper. Stir to combine.
Pour the mixture over the short ribs in the slow cooker.
Cover and cook on low for 6-8 hours or high for 4-6 hours until meat is fork-tender.
Remove short ribs, shred the meat, and return it to the slow cooker.
Garnish with fresh thyme and parsley before serving.
Serve with mashed potatoes or crusty bread.
