  • 2 tablespoons Olive Oil For searing the short ribs.
  • 1 large Onion Finely chopped.
  • 4 cloves Garlic Minced.
  • 2 medium Carrots Diced.
  • 1 stalk Celery Chopped.
  • 4 cups Beef Broth High-quality broth recommended.
  • 2 tablespoons Tomato Paste For richness and acidity.

Spices

  • 1 teaspoon Ground Cinnamon
  • 1 teaspoon Smoked Paprika

Salt and Pepper

  • Salt To taste.

Garnish

  • 1 handful Fresh Thyme Chopped.
  • 1 handful Fresh Parsley Chopped.

Instructions

  • Prepare your ingredients: chop the onion, garlic, carrots, and celery.
  • Heat olive oil in a large skillet over medium-high heat. Sear short ribs for 4-5 minutes on each side until browned.
  • Transfer the short ribs to the slow cooker.
  • Sauté onion, garlic, carrots, and celery in the same skillet for 5-7 minutes until soft.
  • Stir in tomato paste and cook for another 2 minutes.
  • Pour in beef broth and scrape the skillet to release flavorful bits.
  • Add spices: cinnamon, smoked paprika, salt, and pepper. Stir to combine.
  • Pour the mixture over the short ribs in the slow cooker.
  • Cover and cook on low for 6-8 hours or high for 4-6 hours until meat is fork-tender.
  • Remove short ribs, shred the meat, and return it to the slow cooker.
  • Garnish with fresh thyme and parsley before serving.
  • Serve with mashed potatoes or crusty bread.
