Instructions

  • Start by preparing the chicken. In a medium pot, add two boneless, skinless chicken breasts and cover them with water. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes until the chicken is fully cooked and tender.
  • While the chicken is cooking, heat two tablespoons of olive oil in a large skillet over medium heat. Add one finely chopped onion and sauté it for about 5 minutes, or until it becomes translucent and slightly caramelized.
  • Add three minced garlic cloves to the skillet and sauté for an additional minute. The garlic should become fragrant but not burnt.
  • Once the chicken is cooked, remove it from the pot and allow it to cool slightly. Using two forks, shred the chicken into bite-sized pieces.
  • Return the shredded chicken to the skillet with the sautéed onions and garlic. Pour in one cup of your favorite barbecue sauce, ensuring the chicken is well-coated. Stir to combine all ingredients thoroughly.
  • Cook the mixture over low heat for about 5-7 minutes, allowing the flavors to meld together. Stir occasionally to prevent sticking.
  • While the chicken mixture is simmering, prepare your hamburger buns. You can toast them lightly on a dry skillet or in a toaster if desired.
  • To serve, place a generous scoop of the savory shredded BBQ chicken mixture onto the bottom half of each bun. Add any optional toppings like cheese, pickles, or coleslaw for added flavor and texture.
  • Top with the other half of the bun, press down gently, and serve immediately while hot.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. You can also freeze the shredded BBQ chicken mixture for future use.
