Instructions
Preheat your oven to 400°F (200°C).
Pat the salmon fillets dry and place them on a sheet pan lined with parchment paper.
Drizzle the salmon with 1 tablespoon of olive oil and coat with peri peri sauce.
Chop the bell peppers, red onion, and zucchini into uniform pieces. In a bowl, combine with remaining olive oil, salt, and pepper.
Spread the vegetables around the salmon on the sheet pan in a single layer.
Roast in the oven for 15-20 minutes until the salmon flakes easily and reaches 145°F (63°C).
Let the dish rest for a few minutes before garnishing with parsley.
Serve with a squeeze of fresh lemon juice if desired.
