  • 4 pieces Salmon Fillets 4 to 6 ounces each, skin-on for better flavor.
  • 1/4 cup Peri Peri Sauce Store-bought or homemade.
  • 2 cups Bell Peppers Mixed colors, sliced into strips.
  • 1 medium Red Onion Sliced into wedges.
  • 1 medium Zucchini Sliced into half-moon shapes.
  • 2 tablespoons Olive Oil Extra virgin for roasting.
  • to taste Salt
  • to taste Black Pepper Freshly ground.
  • 1 handful Fresh Parsley Chopped for garnish.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Pat the salmon fillets dry and place them on a sheet pan lined with parchment paper.
  • Drizzle the salmon with 1 tablespoon of olive oil and coat with peri peri sauce.
  • Chop the bell peppers, red onion, and zucchini into uniform pieces. In a bowl, combine with remaining olive oil, salt, and pepper.
  • Spread the vegetables around the salmon on the sheet pan in a single layer.
  • Roast in the oven for 15-20 minutes until the salmon flakes easily and reaches 145°F (63°C).
  • Let the dish rest for a few minutes before garnishing with parsley.
  • Serve with a squeeze of fresh lemon juice if desired.
