  • 1 lb Shrimp Fresh or frozen, medium-sized shrimp work best.
  • 1 cup Parmesan Cheese Grated or shredded for the crust.
  • 4 pieces Tortillas Flour or corn, medium-sized.
  • 2 cloves Garlic Minced for flavor.
  • 1 teaspoon Paprika For seasoning.
  • 1 teaspoon Cumin For seasoning.
  • 1 teaspoon Black Pepper For seasoning.
  • 2 tablespoons Olive Oil For cooking.
  • 1/4 cup Fresh Herbs Chopped parsley or cilantro for garnish.

Instructions

  • 1. Prep the shrimp by thawing and patting dry.
  • 2. In a mixing bowl, combine shrimp with minced garlic, paprika, cumin, and black pepper. Marinate for 10 minutes.
  • 3. Heat a skillet over medium-high heat, add olive oil, and sauté shrimp for 2-3 minutes until pink and opaque.
  • 4. Remove shrimp and add more olive oil to the skillet. Place a tortilla in the skillet.
  • 5. Sprinkle Parmesan cheese on half of the tortilla, add shrimp, and fold over.
  • 6. Cook for 3-4 minutes until golden brown, then flip and cook the other side.
  • 7. Remove from skillet, let cool slightly, and slice into wedges.
  • 8. Repeat with remaining tortillas and serve hot with fresh herbs and dipping sauces.

Notes

Store leftovers in an airtight container for up to three days. Reheat in a skillet or microwave.
