Instructions
1. Prep the shrimp by thawing and patting dry.
2. In a mixing bowl, combine shrimp with minced garlic, paprika, cumin, and black pepper. Marinate for 10 minutes.
3. Heat a skillet over medium-high heat, add olive oil, and sauté shrimp for 2-3 minutes until pink and opaque.
4. Remove shrimp and add more olive oil to the skillet. Place a tortilla in the skillet.
5. Sprinkle Parmesan cheese on half of the tortilla, add shrimp, and fold over.
6. Cook for 3-4 minutes until golden brown, then flip and cook the other side.
7. Remove from skillet, let cool slightly, and slice into wedges.
8. Repeat with remaining tortillas and serve hot with fresh herbs and dipping sauces.
Notes
Store leftovers in an airtight container for up to three days. Reheat in a skillet or microwave.
