  • 8 ounces Mushrooms Sliced, cremini or button mushrooms work well.
  • 8 ounces Chorizo Halal chorizo, removed from casing.
  • 6 pieces Tortillas Corn or flour, warmed.
  • 1 small Onion Finely chopped.
  • 2 cloves Garlic Minced.
  • 2 tablespoons Olive Oil For sautéing.
  • 1 handful Fresh Cilantro Chopped for garnish.
  • 1 piece Lime Cut into wedges for serving.

Instructions

  • Dice the potatoes into small cubes, boil in salted water for 8-10 minutes until fork-tender, then drain.
  • Heat olive oil in a skillet, sauté chopped onion for 3-4 minutes until translucent.
  • Add chorizo to the skillet, cook for 5-6 minutes until browned, breaking it apart.
  • Add minced garlic, sauté for 1-2 minutes until fragrant.
  • Fold in the cooked potatoes, stir gently, and cook for another 2-3 minutes until heated through.
  • Warm tortillas in a damp cloth or skillet.
  • Assemble tacos with the filling, garnish with cilantro, and squeeze lime juice over the top.
  • Serve immediately with lime wedges on the side.
