Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly, then pat them dry.
Chop the potatoes into even cubes, roughly 1-inch in size.
In a large mixing bowl, combine the chopped potatoes, olive oil, minced garlic, salt, and pepper. Toss until well-coated.
Fold in the kimchi, ensuring even distribution.
Line a baking sheet with parchment paper or grease it lightly. Spread the potato and kimchi mixture evenly.
Roast in the preheated oven for 25-30 minutes, tossing halfway through.
Check for doneness; potatoes should be tender. If needed, roast for an additional 5-10 minutes.
Remove from oven and let cool for a couple of minutes.
