Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and scrub the potatoes thoroughly, then pat them dry.
  • Chop the potatoes into even cubes, roughly 1-inch in size.
  • In a large mixing bowl, combine the chopped potatoes, olive oil, minced garlic, salt, and pepper. Toss until well-coated.
  • Fold in the kimchi, ensuring even distribution.
  • Line a baking sheet with parchment paper or grease it lightly. Spread the potato and kimchi mixture evenly.
  • Roast in the preheated oven for 25-30 minutes, tossing halfway through.
  • Check for doneness; potatoes should be tender. If needed, roast for an additional 5-10 minutes.
  • Remove from oven and let cool for a couple of minutes.
  • Transfer to a serving dish and garnish with chopped green onions and toasted sesame seeds.
