Instructions
1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Reserve about a cup of pasta water, then drain the pasta and set it aside.
2. In a large skillet, heat olive oil over medium heat. Add the sliced fennel and a pinch of salt. Sauté for about 10-15 minutes until caramelized.
3. Push the fennel to one side of the skillet. Add minced garlic to the empty side and sauté for about 1 minute until fragrant.
4. Add the sausage, breaking it apart with a spoon. Cook for 8-10 minutes until browned and cooked through.
5. Return the cooked pasta to the skillet, tossing it with the fennel and sausage mixture. Add reserved pasta water as needed for consistency.
6. Season with salt and pepper to taste. Stir well to combine all ingredients.
