Ingredients

Pasta

  • 12 ounces Pasta (penne or fettuccine) Choose your favorite type of pasta.

Fennel

Sausage

Garlic

Olive Oil

Parmesan Cheese

  • 0.5 cup Parmesan cheese, grated For serving.

Salt and Pepper

Fresh Herbs

  • 1 handful Fresh parsley or basil, chopped For garnish.

Instructions

  • 1. Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Reserve about a cup of pasta water, then drain the pasta and set it aside.
  • 2. In a large skillet, heat olive oil over medium heat. Add the sliced fennel and a pinch of salt. Sauté for about 10-15 minutes until caramelized.
  • 3. Push the fennel to one side of the skillet. Add minced garlic to the empty side and sauté for about 1 minute until fragrant.
  • 4. Add the sausage, breaking it apart with a spoon. Cook for 8-10 minutes until browned and cooked through.
  • 5. Return the cooked pasta to the skillet, tossing it with the fennel and sausage mixture. Add reserved pasta water as needed for consistency.
  • 6. Season with salt and pepper to taste. Stir well to combine all ingredients.
  • 7. Plate the pasta and garnish with Parmesan cheese and chopped herbs. Serve hot.

Notes

For variations, consider adding red pepper flakes, more vegetables, or using whole wheat pasta for a healthier twist.
