Instructions

  • Preheat your oven to 400°F (200°C).
  • Prepare the tomatoes by washing them thoroughly and cutting them in half.
  • In a large mixing bowl, combine the halved tomatoes, minced garlic, and chopped onion. Drizzle with the olive oil and sprinkle with salt, pepper, and sugar. Toss everything together until the tomatoes are well-coated.
  • Spread the tomato mixture evenly on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 25 to 30 minutes, or until the tomatoes are soft and slightly charred at the edges.
  • Once roasted, remove from the oven and let it cool slightly. Transfer the roasted tomatoes, onion, and garlic into a large pot.
  • Add the vegetable broth to the pot. Using an immersion blender, blend the mixture until smooth.
  • Place the pot on the stove over medium heat and bring the soup to a gentle simmer. Allow it to cook for about 10 minutes, stirring occasionally.
  • During the last few minutes of cooking, stir in the fresh basil leaves and cream (if using).
  • Adjust seasoning with additional salt and pepper as needed. Once the flavors are balanced, remove from heat.
  • Serve hot, garnished with fresh basil leaves or a drizzle of olive oil.
