  • 1 pound Asparagus Fresh asparagus spears, firm and bright green.

Oils

  • 2 tablespoons Olive Oil Extra virgin olive oil for roasting.

  • 1 teaspoon Salt Sea salt to season the asparagus and beans.
  • 0.5 teaspoon Pepper Freshly ground black pepper.

Beans

  • 0.5 cup Parmesan Cheese Grated Parmesan cheese for the beans.
  • 1 can White Beans 15 ounces of cannellini or great northern beans, rinsed and drained.

Aromatics

  • 2 cloves Garlic Minced garlic for flavor.
  • 1 tablespoon Lemon Juice Fresh lemon juice for brightness.

Herbs

  • 2 tablespoons Fresh Herbs Chopped parsley or basil for garnish.

Instructions

  • Preheat your oven to 425°F (220°C).
  • Wash and trim the asparagus, discarding the woody ends.
  • Place the trimmed asparagus in a large mixing bowl. Drizzle with olive oil, salt, and pepper. Toss to coat.
  • Spread the asparagus on a baking sheet lined with parchment paper.
  • Roast the asparagus for 15-20 minutes until bright green and tender.
  • In a medium saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes.
  • Add the rinsed white beans to the saucepan and warm through for 3-5 minutes.
  • Stir in Parmesan cheese and lemon juice, mixing until creamy. Add water if needed for consistency.
  • Arrange the roasted asparagus on a platter and spoon the savory Parmesan beans over the top.
  • Garnish with fresh herbs and serve immediately.

Notes

For variations, consider adding red pepper flakes for heat or sun-dried tomatoes for a Mediterranean twist.
