Chia Seeds
Soaked to expand and create texture.

Fresh Lemon Juice
Juice from one medium lemon.

Filtered or purified water.

Honey or maple syrup to taste.

Gently muddled for flavor.
Instructions
Measure 2 tablespoons of chia seeds and place them in a small bowl or jar.
Pour 1 cup of water over the chia seeds and stir gently.
Set aside for 10-15 minutes until the chia seeds expand.
Juice a fresh lemon to yield 2-3 tablespoons of lemon juice.
In a pitcher, add 2 cups of water and the lemon juice.
Add the hydrated chia seeds to the pitcher.
If desired, add sweetener and muddled mint leaves.
Stir the mixture thoroughly and let it sit for 5 minutes.
Serve in glasses filled with ice, garnished with mint or lemon slices.
Notes
Store leftovers in a sealed container in the refrigerator for up to three days.
