Instructions
Wash all fresh produce under cold water. Remove tough stems from kale and spinach, and chop them into manageable pieces. Peel cucumber and ginger, and core and chop the apple. Cut pineapple into chunks if using fresh.
If using a juicer, alternate feeding the greens and fruits through the chute. If using a blender, place all chopped ingredients in the pitcher and add a cup of water.
Blend on high speed until smooth. Add more water gradually if the mixture is too thick, blending for about 30-60 seconds.
For a smoother juice, strain the mixture through a fine mesh strainer into a bowl or pitcher, pressing down on the pulp to extract juice.
Stir in the freshly squeezed lemon juice and grated ginger. Adjust flavors as necessary, adding more apple or pineapple for sweetness if desired.
Pour the green juice into glasses filled with ice. Garnish with mint leaves or a slice of lemon. Serve immediately.
