Ingredients

Cauliflower

  • 1 medium head Cauliflower Riced to yield about 4 cups.
  • 2 tablespoons Lime juice Freshly squeezed for best flavor.
  • 1 cup Cilantro Chopped, adds flavor and freshness.
  • 1 tablespoon Olive oil Extra virgin for sautéing.
  • 2 cloves Garlic Minced for flavor.
  • 1 pinch Salt To taste.
  • 0.25 teaspoon Black pepper Freshly ground for mild heat.

Vegetables

  • 1 cup Bell peppers Optional, for added color and nutrition.

Protein (optional)

  • 1 cup Grilled chicken Optional, for added protein.

Instructions

  • Rinse the cauliflower, remove leaves and stem, and cut into quarters. Rice the cauliflower using a food processor or box grater.
  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add minced garlic and sauté for about 30 seconds until fragrant.
  • Add riced cauliflower to the skillet, stirring to coat with oil and garlic. Cook for 5-7 minutes until tender.
  • Season with salt and black pepper, stirring to combine.
  • Remove from heat and squeeze in lime juice. Fold in chopped cilantro.
  • If using, stir in any additional vegetables or protein.
  • Taste and adjust seasoning if necessary, then serve warm.
