Instructions
Rinse the cauliflower, remove leaves and stem, and cut into quarters. Rice the cauliflower using a food processor or box grater.
Heat olive oil in a large skillet over medium heat until shimmering.
Add minced garlic and sauté for about 30 seconds until fragrant.
Add riced cauliflower to the skillet, stirring to coat with oil and garlic. Cook for 5-7 minutes until tender.
Season with salt and black pepper, stirring to combine.
Remove from heat and squeeze in lime juice. Fold in chopped cilantro.
If using, stir in any additional vegetables or protein.
Taste and adjust seasoning if necessary, then serve warm.
