Ingredients

Lentils

  • 1 cup Dried green or brown lentils Rinsed and ready to cook.

Vegetables

  • 1 medium Cucumber Diced.
  • 1 cup Cherry tomatoes Halved.
  • 0.5 small Red onion Finely chopped.
  • 1 handful Fresh parsley Chopped.

Dressing

  • 3 tablespoons Extra-virgin olive oil
  • 2 tablespoons Lemon juice Juice of one lemon.

Seasonings

  • to taste Salt
  • to taste Black pepper Freshly cracked.

Instructions

  • Rinse the lentils under cold water to remove any dust or debris.
  • Place the rinsed lentils in a medium saucepan with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender.
  • While the lentils cook, prepare the vegetables: dice the cucumber, halve the cherry tomatoes, and chop the red onion.
  • Once the lentils are cooked, drain any excess water and let them cool for about 5 minutes.
  • Add the cooled lentils to the mixing bowl with the prepared vegetables and toss gently to combine.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the lentil and vegetable mixture and toss gently to coat.
  • Sprinkle chopped parsley over the salad and toss again.
  • Let the salad sit for about 10 minutes before serving to allow flavors to meld.

Notes

This salad can be served chilled or at room temperature and is great for meal prep.
