  • 4 ears Fresh Corn on the Cob Husked and cleaned.
  • 1/2 cup Mayonnaise Acts as the creamy base.
  • 1 cup Queso Fresco Crumbled, can substitute with cotija cheese.
  • 2 limes Lime Juice Freshly squeezed.
  • 1 teaspoon Chili Powder Adjust based on heat preference.
  • 1/4 cup Fresh Cilantro Chopped, for garnish.

Instructions

  • 1. Husk the corn and rinse under cold water. Pat dry.
  • 2. Preheat the grill to medium-high heat.
  • 3. Grill the corn for 10-15 minutes, turning occasionally until charred.
  • 4. In a mixing bowl, combine mayonnaise, queso fresco, lime juice, chili powder, and salt. Mix well.
  • 5. Remove corn from the grill and let cool slightly.
  • 6. Coat each ear of corn with the cheesy mixture.
  • 7. Sprinkle additional queso fresco on top.
  • 8. Squeeze fresh lime juice over the corn and garnish with cilantro.
  • 9. Serve immediately while warm.
  • 10. Enjoy as a side dish, appetizer, or snack.
