Instructions
1. Husk the corn and rinse under cold water. Pat dry.
2. Preheat the grill to medium-high heat.
3. Grill the corn for 10-15 minutes, turning occasionally until charred.
4. In a mixing bowl, combine mayonnaise, queso fresco, lime juice, chili powder, and salt. Mix well.
5. Remove corn from the grill and let cool slightly.
6. Coat each ear of corn with the cheesy mixture.
7. Sprinkle additional queso fresco on top.
8. Squeeze fresh lime juice over the corn and garnish with cilantro.
9. Serve immediately while warm.
10. Enjoy as a side dish, appetizer, or snack.
