  • 1 Red Bell Pepper Sliced.
  • 1 Green Bell Pepper Sliced.
  • 1 Medium Onion Chopped.
  • 1 Fresh Lime Juice from one lime.
  • 1 handful Fresh Cilantro Chopped.
  • 8 small Corn or Flour Tortillas Warm and pliable for best experience.
  • Optional Toppings Shredded cheese, sour cream, avocado, or salsa.

Instructions

  • Begin by preparing your ingredients. Chop the onions and bell peppers, and set them aside. Measure out the taco seasoning and chicken broth.
  • In the base of your slow cooker, place the chopped onions and bell peppers.
  • Add the chicken breasts on top of the vegetables.
  • Sprinkle the taco seasoning evenly over the chicken breasts.
  • Pour the chicken broth into the slow cooker.
  • Squeeze the juice of one lime over the contents of the slow cooker.
  • Cover the slow cooker and set it to low heat for 6 to 8 hours or high heat for 4 to 5 hours.
  • Check the chicken during the last 30 minutes of cooking. It should shred easily with a fork.
  • Once cooked, use two forks to shred the chicken directly in the slow cooker.
  • Warm your tortillas in a dry skillet or microwave.
  • To serve, place a generous portion of the shredded chicken mixture onto each tortilla and top with fresh cilantro and any additional toppings.
