  • 2-3 pounds Beef Tenderloin Well-trimmed and free from excess fat.
  • 2 tablespoons Olive Oil Extra virgin for marinating.
  • 2 tablespoons Fresh Rosemary Finely chopped.
  • 2 tablespoons Fresh Thyme Finely chopped.
  • 4 cloves Garlic Minced.
  • 1 tablespoon Kosher Salt For seasoning.
  • 1 teaspoon Black Pepper Freshly ground.
  • 2 tablespoons Unsalted Butter For basting.

Instructions

  • Preheat your oven to 425°F (220°C).
  • Trim any excess fat or silver skin from the beef tenderloin.
  • In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to create a paste.
  • Rub the herb mixture all over the beef tenderloin.
  • Heat a heavy oven-safe skillet over medium-high heat and add a tablespoon of olive oil. Sear the beef tenderloin on all sides for 2-3 minutes.
  • Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C).
  • Add butter to the skillet during the last 10 minutes of roasting and baste the tenderloin.
  • Remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing.
  • Slice the beef tenderloin into thick medallions and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days.
