Instructions
Preheat your oven to 425°F (220°C).
Trim any excess fat or silver skin from the beef tenderloin.
In a small bowl, combine minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and black pepper to create a paste.
Rub the herb mixture all over the beef tenderloin.
Heat a heavy oven-safe skillet over medium-high heat and add a tablespoon of olive oil. Sear the beef tenderloin on all sides for 2-3 minutes.
Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until the internal temperature reaches 130°F (54°C).
Add butter to the skillet during the last 10 minutes of roasting and baste the tenderloin.
Remove the tenderloin from the oven and let it rest for 10-15 minutes before slicing.
Slice the beef tenderloin into thick medallions and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days.
