Instructions

  • Preheat your oven to 425°F (220°C).
  • Rinse the chicken under cold water and pat it dry with paper towels. Place the chicken in a large roasting pan.
  • In a small bowl, mix olive oil, paprika, minced garlic, lemon juice, salt, and pepper to create a paste.
  • Rub the spice mixture all over the chicken, including inside the cavity.
  • Arrange the quartered onion around the chicken in the roasting pan.
  • Roast the chicken for about 1 hour and 15 minutes, or until the skin is golden brown and the internal temperature reaches 165°F (75°C).
  • Baste the chicken halfway through roasting with the juices from the pan.
  • Let the chicken rest for 10-15 minutes before carving.
  • Serve the chicken on a platter, garnished with additional herbs if desired.
