Instructions
Rinse 1 cup of long-grain basmati rice under cold running water. Soak in water for about 20 minutes, then drain well.
Prepare saffron infusion by steeping 1/4 teaspoon of saffron threads in 2 tablespoons of warm water or broth.
In a medium-sized pot, heat 2 tablespoons of olive oil or ghee over medium heat for about 30 seconds.
Add the rinsed and drained basmati rice to the pot and stir gently to coat the grains in the oil or ghee, toasting for 2-3 minutes.
Pour in 2 cups of water or vegetable broth and add the saffron infusion along with 1 teaspoon of salt. Stir gently to combine.
Bring the mixture to a rolling boil, then reduce heat to low and cover the pot. Simmer for 15-18 minutes without lifting the lid.
Turn off the heat and let the rice rest for 5-10 minutes with the lid on.
Remove the lid and fluff the rice gently with a fork. Garnish with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. Reheat with a splash of water.
