  • Begin by measuring out 2 cups of all-purpose flour and place it on a clean surface or in a large mixing bowl. Create a well in the center of the flour to prepare for the wet ingredients.
  • Crack 3 large eggs into the well. Add 1 teaspoon of salt and 1 tablespoon of olive oil to the eggs. This combination will enrich the dough.
  • Using a fork, gently whisk the eggs, gradually incorporating the flour from the edges of the well. Continue until the mixture becomes too thick to mix with a fork.
  • At this point, use your hands to knead the dough. Bring it together into a ball and start kneading it for about 8-10 minutes. The dough should become smooth and elastic. If it’s too sticky, sprinkle a little flour; if too dry, add a few drops of water.

  • Bring a large pot of salted water to a boil. Add the fresh pasta and cook for about 2-4 minutes, or until it floats to the surface.
