Instructions
Preheat your oven to 425°F (220°C).
Prepare the pie crust. If using store-bought, let it sit at room temperature. If making from scratch, combine flour and salt, cut in cold butter, add ice water, shape into discs, and refrigerate for 30 minutes.
Roll out one disc of dough to fit a 9-inch pie pan and transfer it into the pan.
In a mixing bowl, combine blueberries, sugar, flour, salt, and lemon juice. Toss gently to coat.
Pour the blueberry filling into the prepared crust and dot with butter.
Roll out the second disc of dough, place it over the filling, and seal the edges.
Brush the top crust with water or milk and sprinkle with sugar.
Bake on a baking sheet for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 35-40 minutes until bubbly and golden brown.
Cool on a wire rack for at least two hours before serving.
