  • 1 double pie crust Pie Crust Homemade or store-bought.
  • 1 pinch Salt Balances the sweetness of the sugar.

Instructions

  • Preheat your oven to 425°F (220°C).
  • Prepare the pie crust. If using store-bought, let it sit at room temperature. If making from scratch, combine flour and salt, cut in cold butter, add ice water, shape into discs, and refrigerate for 30 minutes.
  • Roll out one disc of dough to fit a 9-inch pie pan and transfer it into the pan.
  • In a mixing bowl, combine blueberries, sugar, flour, salt, and lemon juice. Toss gently to coat.
  • Pour the blueberry filling into the prepared crust and dot with butter.
  • Roll out the second disc of dough, place it over the filling, and seal the edges.
  • Brush the top crust with water or milk and sprinkle with sugar.
  • Bake on a baking sheet for 15 minutes, then reduce temperature to 350°F (175°C) and bake for an additional 35-40 minutes until bubbly and golden brown.
  • Cool on a wire rack for at least two hours before serving.
  • Serve warm or at room temperature.
