Ingredients

Chicken pieces

Breading

  • 1 tablespoon Onion powder
  • 1 tablespoon Paprika
  • 1 teaspoon Cayenne pepper Adjust to suit spice preference.

  • 1 teaspoon Black pepper

Frying Oil

  • 4 cups Neutral oil (vegetable or canola) For frying.

Instructions

  • 1. Marinate the chicken in buttermilk for at least 2 hours or overnight.
  • 2. Prepare the breading mixture by combining flour, cornstarch, and spices in a bowl.
  • 3. Allow the marinated chicken to come to room temperature for 15 minutes.
  • 4. Heat oil in a deep skillet to 350°F (175°C).
  • 5. Dredge each piece of chicken in the flour mixture, dip back into buttermilk, then re-dredge in flour.
  • 6. Fry the chicken in batches for 7-10 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  • 7. Transfer fried chicken to a wire rack to drain excess oil.
  • 8. Let the chicken rest for a few minutes before serving.
