  • 4 fillets Salmon Fillets Each fillet should weigh about six ounces.
  • 1 cup Fresh Herbs (Dill, Parsley, Basil) A handful of each, roughly chopped.
  • 1 medium Lemon Thinly sliced.
  • 2 cloves Garlic Minced.
  • 2 cups Vegetable Broth Low-sodium recommended.
  • 2 tablespoons Olive Oil Extra virgin.
  • to taste Salt and Pepper Kosher salt and freshly ground black pepper.

Instructions

  • Rinse the salmon fillets under cold water and pat them dry with paper towels.
  • Chop the fresh herbs finely.
  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 30 seconds.
  • Pour in vegetable broth, add chopped herbs and lemon slices, and stir gently.
  • Bring the broth to a gentle simmer.
  • Carefully place the salmon fillets into the simmering broth, skin-side down.
  • Cover and poach for 8 to 10 minutes until salmon flakes easily.
  • Remove from heat and let sit covered for 2 minutes.
  • Transfer salmon to a serving platter and drizzle with poaching liquid.
  • Serve immediately and enjoy!
