Instructions

  • Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • Cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually add this to the wet ingredients, mixing on low speed until just combined.
  • Fold in the old-fashioned oats using a spatula.
  • Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10-12 minutes or until the edges are lightly golden. Allow to cool on the baking sheets for 5 minutes before transferring to wire racks.
  • Prepare the cream filling by beating together the softened butter and powdered sugar until smooth. Add vanilla extract and milk, mixing until creamy.
  • Spread cream filling on the flat side of half the cookies and top with the remaining cookies to create sandwiches.
