  • 1 pound Ground beef or ground chicken Choose a meat with a good fat content for juicy meatballs.

Instructions

  • In a large mixing bowl, combine the ground meat, breadcrumbs, grated Parmesan, egg, minced garlic, dried oregano, dried basil, salt, and pepper. Mix until well combined, but do not overwork the meat.
  • Form the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet.
  • In a large pot, heat the olive oil over medium heat. Add the chopped onion, sliced carrots, and sliced celery. Sauté for about 5-7 minutes until softened.
  • Add the chicken broth and diced tomatoes to the pot. Stir in the Italian seasoning and bring to a gentle boil.
  • Carefully add the meatballs to the boiling broth. Reduce heat to a simmer and cover. Cook for 20-25 minutes until meatballs are cooked through.
  • If using, stir in the frozen peas or corn during the last 5 minutes of cooking.
  • Taste the soup and adjust seasoning if necessary. Ladle into bowls and garnish with chopped parsley.
  • Serve hot, accompanied by crusty bread or a side salad.

Meatball soup can be customized with different proteins, herbs, and vegetables. Serve with fresh bread for a complete meal.
