Instructions
Rinse the lentils under cold water until the water runs clear.
In a large pot, heat the coconut oil over medium heat. Add cumin seeds and sauté for about 30 seconds.
Add the chopped onions and sauté for 5-7 minutes until translucent and golden brown.
Add minced garlic and grated ginger, cooking for an additional 1-2 minutes.
Sprinkle in turmeric, ground coriander, and garam masala, stirring well for about 1 minute.
Pour in the diced tomatoes and cook for 3-4 minutes.
Add the rinsed lentils and vegetable broth or water, stirring to combine.
Bring to a gentle boil, then reduce heat to low and cover. Simmer for 20-25 minutes.
If adding chopped vegetables, stir them in during the last 10 minutes of cooking.
Adjust seasoning as needed and garnish with chopped cilantro before serving.
