Instructions
1. Prepare the kale: Remove tough stems, rinse under cold water, and dry thoroughly.
2. Massage the kale: Drizzle olive oil and sprinkle salt over the kale, then massage for 2-3 minutes.
3. Prepare the dressing: Whisk together lemon juice, remaining olive oil, salt, and pepper in a separate bowl.
4. Combine ingredients: Pour the dressing over the kale and toss to coat evenly.
5. Add Parmesan: Sprinkle grated Parmesan over the salad and toss gently.
