Soak wooden skewers in water for at least 30 minutes if using.
Instructions
Gather all your ingredients on a clean surface.
In a large mixing bowl, combine the ground chicken with the finely grated onion.
Add the minced garlic to the mixture and stir well.
Sprinkle in the ground cumin and coriander, mixing thoroughly.
Incorporate the finely chopped parsley into the mixture.
Season the mixture with salt and pepper to taste.
Drizzle the olive oil and squeeze in the lemon juice.
Using your hands, gently mix all the ingredients until fully combined.
Cover the bowl with plastic wrap and let it sit in the refrigerator for at least 30 minutes.
Preheat your grill or oven to medium-high heat.
Form the chicken mixture into oblong shapes around your skewers.
Carefully place the skewers on the hot grates and cook for about 5-6 minutes on each side.
Once cooked, remove the kebabs from the grill and let them rest for a few minutes.
Serve the kebabs with your choice of sides or dips.
