  • 2 tablespoons Unsalted Butter Enriches the glaze and helps honey adhere to the carrots.
  • 1 pinch Salt Helps balance the sweetness of the honey.
  • 1/4 teaspoon Black Pepper Freshly ground, to taste.
  • 1 tablespoon Fresh Herbs (optional) Chopped thyme or parsley for added flavor.

Instructions

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the carrots, then slice them into even pieces, about 1-2 inches long.
  • In a mixing bowl, combine honey and unsalted butter. Microwave for 20-30 seconds until melted, then stir until smooth.
  • Add the sliced carrots to the bowl and toss to coat them evenly in the honey-butter mixture.
  • Prepare a baking sheet by lining it with parchment paper or greasing it lightly.
  • Spread the coated carrots in a single layer on the baking sheet.
  • Sprinkle with salt and pepper, and add fresh herbs if using. Toss gently to distribute.
  • Bake for 25-30 minutes, stirring halfway through, until tender and caramelized.
  • Remove from the oven and let cool for a few minutes before serving.
  • Transfer to a serving dish and serve warm.

Notes

Leftover glazed carrots can be stored in an airtight container in the refrigerator for up to three days.
