Instructions
Preheat your oven to 400°F (200°C).
Wash and peel the carrots, then slice them into even pieces, about 1-2 inches long.
In a mixing bowl, combine honey and unsalted butter. Microwave for 20-30 seconds until melted, then stir until smooth.
Add the sliced carrots to the bowl and toss to coat them evenly in the honey-butter mixture.
Prepare a baking sheet by lining it with parchment paper or greasing it lightly.
Spread the coated carrots in a single layer on the baking sheet.
Sprinkle with salt and pepper, and add fresh herbs if using. Toss gently to distribute.
Bake for 25-30 minutes, stirring halfway through, until tender and caramelized.
Remove from the oven and let cool for a few minutes before serving.
Transfer to a serving dish and serve warm.
