  • 16 ounces Mascarpone Cheese Provides rich, velvety texture.
  • 2 cups Fresh Strawberries Hulled and sliced, reserve some for garnish.
  • 2 packages Ladyfingers Light and airy sponge cookies.
  • 1 cup Coffee Strong, cooled coffee or espresso.
  • ½ cup Granulated Sugar To sweeten the mascarpone mixture.
  • to taste Cocoa Powder For dusting, optional garnish.
  • 1 cup Heavy Cream Whipped to soft peaks.
  • 1 Vanilla Bean (Optional) For additional flavor.

Instructions

  • Brew 1 cup of strong coffee or espresso and allow it to cool completely.
  • Wash and slice 2 cups of fresh strawberries, setting aside a few whole for garnish.
  • In a large mixing bowl, combine 16 ounces of mascarpone cheese and ½ cup of granulated sugar until smooth.
  • In a separate bowl, whip 1 cup of heavy cream until soft peaks form.
  • Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  • Dip each ladyfinger into the cooled coffee for about 2 seconds.
  • Layer soaked ladyfingers in a 9x13 inch dish, followed by a layer of mascarpone cream.
  • Add a layer of sliced strawberries on top of the mascarpone cream.
  • Repeat the layering process until all ingredients are used, finishing with a layer of strawberries.
  • Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  • Before serving, dust with cocoa powder and garnish with reserved strawberries.
  • Slice and serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days.
