Instructions
Brew 1 cup of strong coffee or espresso and allow it to cool completely.
Wash and slice 2 cups of fresh strawberries, setting aside a few whole for garnish.
In a large mixing bowl, combine 16 ounces of mascarpone cheese and ½ cup of granulated sugar until smooth.
In a separate bowl, whip 1 cup of heavy cream until soft peaks form.
Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
Dip each ladyfinger into the cooled coffee for about 2 seconds.
Layer soaked ladyfingers in a 9x13 inch dish, followed by a layer of mascarpone cream.
Add a layer of sliced strawberries on top of the mascarpone cream.
Repeat the layering process until all ingredients are used, finishing with a layer of strawberries.
Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
Before serving, dust with cocoa powder and garnish with reserved strawberries.
Slice and serve chilled.

Store leftovers in an airtight container in the refrigerator for up to three days.
