Instructions
Grate the potatoes and squeeze out excess moisture using a kitchen towel.
Transfer grated potatoes to a mixing bowl and add grated onion.
In a separate bowl, whisk the eggs until well beaten.
Pour the beaten eggs over the potato and onion mixture. Add flour, salt, and pepper, and mix thoroughly.
Heat oil in a skillet over medium-high heat until shimmering.
Drop spoonfuls of the mixture into the hot oil and flatten slightly.
Fry for 3-4 minutes on each side until golden brown and crispy.
Transfer cooked latkes to a plate lined with paper towels to drain excess oil.
