Instructions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Cream together the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
Divide the batter evenly between the prepared cake pans. Bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
While the cakes are cooling, remove the ice cream from the freezer to soften for about 15-20 minutes. Scoop the first quart of ice cream into a large bowl and mix until smooth. Repeat with the second flavor of ice cream.
Once the cake layers have cooled, place one layer on a serving plate. Spread the first flavor of ice cream evenly on top. Place the second cake layer on top, then spread the second flavor of ice cream on top of the second cake layer.
Cover the entire cake with plastic wrap and place it in the freezer for at least 4 hours, or until the ice cream is firm.
In a chilled mixing bowl, beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to beat until stiff peaks form.
Once the cake is firm, remove it from the freezer and take off the plastic wrap. Spread a generous layer of whipped frosting over the top and sides of the cake.
Drizzle chocolate sauce or fudge over the top and sprinkle with your choice of toppings.
Return the finished cake to the freezer for at least another hour to set the frosting before slicing and serving.
