Instructions
Gather all your ingredients on a clean working surface.
In a medium saucepan, combine water, sugar, and salt. Bring to a gentle boil.
Remove from heat and add flour and baking powder. Stir until a cohesive dough forms.
Let the dough cool for about 10 minutes.
Transfer the dough to a piping bag fitted with a star-shaped tip.
Heat vegetable oil to 375°F (190°C) in a heavy-bottomed pot.
Pipe strips of dough into the hot oil and cut to desired length.
Fry for 2-3 minutes on each side until golden brown.
Remove churros and drain on paper towels.
Roll churros in a mixture of sugar and cinnamon while warm.
Serve warm with your favorite dipping sauces.
