Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
2. Add minced garlic and minced jalapeño to the pot. Sauté for an additional minute.
3. Add chopped red and green bell peppers, and diced carrot. Cook for another 5 minutes.
4. Stir in ground cumin and chili powder, toasting for about 30 seconds.
5. Pour in diced tomatoes and chicken broth, stirring to combine.
6. Bring to a simmer, then add chicken breast. Cover and simmer for 20-25 minutes.
7. Remove chicken, shred it, and return to the pot. Adjust seasoning as needed.
8. Prepare tortilla strips by frying or baking until crispy.
9. Serve soup hot, topped with tortilla strips, cilantro, and lime juice.
