Instructions

  • 1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for about 5 minutes until translucent.
  • 2. Add minced garlic and minced jalapeño to the pot. Sauté for an additional minute.
  • 3. Add chopped red and green bell peppers, and diced carrot. Cook for another 5 minutes.
  • 4. Stir in ground cumin and chili powder, toasting for about 30 seconds.
  • 5. Pour in diced tomatoes and chicken broth, stirring to combine.
  • 6. Bring to a simmer, then add chicken breast. Cover and simmer for 20-25 minutes.
  • 7. Remove chicken, shred it, and return to the pot. Adjust seasoning as needed.
  • 8. Prepare tortilla strips by frying or baking until crispy.
  • 9. Serve soup hot, topped with tortilla strips, cilantro, and lime juice.

Notes

Consider adding black beans or corn for extra nutrition. Adjust spice level to your preference.
