Instructions
In a mixing bowl, combine the softened unsalted butter, minced garlic, chopped fresh herbs, and lemon juice. Mix until well combined and season with salt and pepper.
Transfer the herbed butter onto plastic wrap, shape into a log, and chill in the refrigerator for at least 30 minutes.
Pound each chicken breast between plastic wrap until about ½ inch thick.
Place a slice of the chilled herbed butter in the center of each chicken breast, fold the edges over, and secure with toothpicks or twine.
Set up a dredging station with flour, beaten eggs, and breadcrumbs in separate shallow dishes.
Coat each stuffed chicken breast in flour, dip in eggs, and roll in breadcrumbs.
Heat vegetable oil in a frying pan over medium-high heat. Fry the chicken for 4-5 minutes on each side until golden brown and cooked through.
Transfer to a paper towel-lined plate to drain excess oil and let rest for a couple of minutes.
Slice each chicken Kiev in half to reveal the melted herbed butter inside and serve with your choice of sides.
