Homemade Chicken Kiev

Ingredients

Chicken Breasts

  • 4 pieces Boneless, skinless chicken breasts (6-8 oz each) Main protein for the dish.

Herbed Butter Filling

  • 1 cup Unsalted Butter Softened to room temperature.
  • 2 tablespoons Fresh Parsley Chopped finely.
  • 2 tablespoons Fresh Dill Chopped finely.
  • 2 tablespoons Fresh Chives Chopped finely.
  • 2 cloves Garlic Minced.
  • 1 tablespoon Lemon Juice Freshly squeezed.
  • 1 teaspoon Salt To taste.
  • 0.5 teaspoon Black Pepper To taste.

Coating

  • 1 cup All-Purpose Flour For dredging.
  • 2 large Eggs Beaten.
  • 2 cups Breadcrumbs Plain or panko for extra crunch.
  • 1 cup Vegetable Oil For frying.

Instructions

  • In a mixing bowl, combine the softened unsalted butter, minced garlic, chopped fresh herbs, and lemon juice. Mix until well combined and season with salt and pepper.
  • Transfer the herbed butter onto plastic wrap, shape into a log, and chill in the refrigerator for at least 30 minutes.
  • Pound each chicken breast between plastic wrap until about ½ inch thick.
  • Place a slice of the chilled herbed butter in the center of each chicken breast, fold the edges over, and secure with toothpicks or twine.
  • Set up a dredging station with flour, beaten eggs, and breadcrumbs in separate shallow dishes.
  • Coat each stuffed chicken breast in flour, dip in eggs, and roll in breadcrumbs.
  • Heat vegetable oil in a frying pan over medium-high heat. Fry the chicken for 4-5 minutes on each side until golden brown and cooked through.
  • Transfer to a paper towel-lined plate to drain excess oil and let rest for a couple of minutes.
  • Slice each chicken Kiev in half to reveal the melted herbed butter inside and serve with your choice of sides.

Notes

For variations, consider adding cheese to the filling or baking instead of frying for a healthier option.
