Ingredients

Beef Filling

  • 1 pound Ground Beef Use 80/20 ground beef for optimal flavor and juiciness.
  • 4 large Flour Tortillas Tortillas should be at least 10 inches in diameter.
  • 1 medium Onion, diced Use yellow or white onion for a milder taste.
  • 2 cloves Garlic, minced Fresh garlic adds robust flavor.
  • 1 cup Bell Peppers, diced Use a mix of red and green for color and flavor.
  • 1 tablespoon Chili Powder Adjust based on spice preference.
  • 1 teaspoon Cumin Fresh ground cumin yields the best flavor.
  • to taste Salt and Pepper Season to taste.
  • 1 cup Mixed Cheese, shredded A blend of cheddar and Monterey Jack is ideal.

Instructions

  • 1. Heat a large skillet over medium heat. Add the ground beef, breaking it apart with a spatula as it cooks for about 5-7 minutes.
  • 2. Drain excess fat from the skillet to prevent greasy filling.
  • 3. Add diced onion and minced garlic to the skillet. Cook for 3-4 minutes until the onion is translucent.
  • 4. Incorporate diced bell peppers and cook for 3-5 minutes until tender.
  • 5. Sprinkle chili powder and cumin over the mixture, stirring to coat evenly.
  • 6. Season with salt and pepper, then remove from heat.
  • 7. Warm tortillas slightly in a skillet or microwave to make them pliable.
  • 8. Lay a tortilla flat, spoon beef mixture down the center, and sprinkle with cheese.
  • 9. Fold the sides of the tortilla inward and roll it up from the bottom.
  • 10. Repeat with remaining tortillas and filling, placing burritos seam-side down on a platter.
  • 11. Optionally, toast the burritos in a skillet for 2-3 minutes on each side until golden brown.
  • 12. Garnish with fresh cilantro before serving.

Notes

Store leftovers in an airtight container for up to three days. Reheat in the microwave or oven.
