Instructions

  • Heat a large pot over medium heat and add olive oil. Allow the oil to warm for about a minute.
  • Add the chopped onion and sauté for 3-4 minutes until translucent.

  • Add the ground turkey, breaking it up with a wooden spoon, and cook until no longer pink, about 5-7 minutes.
  • Add the diced carrots and chopped celery, stirring to combine, and cook for about 5 minutes.
  • Pour in the beef broth, scraping the bottom of the pot to release any flavorful bits. Bring to a gentle simmer.
  • Incorporate the tomato paste, stirring until fully dissolved.
  • Season with salt, pepper, and oregano. Allow to simmer for 15-20 minutes.
  • Adjust seasoning if necessary, and let simmer longer for a thicker consistency if desired.
  • Remove from heat and stir in the shredded cheddar cheese until melted.
  • Serve hot, garnished with fresh parsley.
