Ingredients

Vegetables

  • 4 cups Broccoli florets Fresh, cut into small pieces.
  • 1 medium Onion Finely chopped.
  • 2 cloves Garlic Minced.

Liquid Base

  • 4 cups Vegetable broth Low-sodium.

Dairy

  • 1.5 cups Cheddar cheese Shredded sharp cheddar.
  • 1 cup Milk Whole or dairy alternative.

Seasonings

  • 2 tablespoons Olive oil For sautéing.
  • to taste Salt
  • to taste Pepper

Instructions

  • Wash and trim the broccoli, cutting it into small florets.
  • In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  • Add minced garlic and stir for about 30 seconds, being careful not to burn it.
  • Add broccoli florets and chopped stems, stirring well. Cook for an additional 3-4 minutes.
  • Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 10-15 minutes until broccoli is tender.
  • Remove from heat and blend the soup until smooth using an immersion blender.
  • Return to low heat and stir in milk, mixing well.
  • Gradually add shredded cheddar cheese, stirring until melted.
  • Season with salt and pepper to taste, adjusting consistency with more broth or milk if needed.
  • Serve hot, garnished with additional cheese or black pepper if desired.

Notes

This soup can be customized with additional vegetables or spices. It can also be made vegan by substituting cheese with nutritional yeast and using plant-based milk.
